Naeng-myeon

Naeng-myeon, a popular Korean dish that consists of cold noodles made from buckwheat and starch, is prepared in various ways to accommodate multiple taste-buds.

The classic, mul naeng-myeon, .is served in a chilled beef broth with pickled radish, sliced Korean pear and a hard-boiled egg. This sweet, refreshing dish is particularly enjoyed on a hot summer day. Other types of naeong-myeon consist of bibim naeng-myeon and hoe naeng-myeon, which use a spicy pepper sauce as a substitution for the chilled beef broth. Hoe naeng-myeon even contains a special ingredient, raw skatefish, which is really a delicacy in Korean cuisine.

Naeng-myeon is often served with a side dish of vinegar and mustard. Also, naeng-myeon goes great with galbi (bbq short ribs) and a cup of hot yuk-soo (boiled beef broth). You can even make your own mouth-savoring naeng-myeon.
